One of North America's oldest wheat varieties, White Sonora has been grown for more than 300 years and is prized for its naturally sweet flavor, creamy color, and remarkable baking qualities. Before modern commodity wheat became the standard, Sonora wheat was the foundation of breads, tortillas, and baked goods throughout the Southwest.
This Imperial Valley harvest was grown organically by Stephen Benson, a California farmer committed to preserving heritage grains alongside his diverse agricultural operation. This crop was planted primarily to expand future seed supplies—not to produce commercial flour—which makes this one of the rarest flours we have ever offered.
After harvest, the wheat is freshly stone-milled by our friends at Staff of Life, a small local mill committed to rebuilding Southern California's grain economy by milling organically grown California wheat in small batches. Their careful milling preserves the grain's natural flavor, oils, and nutrition while supporting the growing partnership between local farmers, millers, and bakers.
Each bag helps increase the supply of locally adapted Sonora wheat for future generations of farmers, millers, and bakers across Southern California.
