Welcome to The Bread Underground
At The Bread Underground, we craft small-batch, naturally leavened artisanal bread, using a slow fermentation process that brings out the best in every loaf. Our bread is made with care, featuring organic, GMO-free, local, and domestic ingredients, all brought together with 100% pure Palomar Spring Water.

Our Story
We’re Jackie and Jeff, longtime residents of North County San Diego for over 20 years. Jackie has been baking for a decade, mastering the art of sourdough. Jeff, on the other hand, is passionate (some might say obsessed) with sourcing the best organic ingredients and pure spring water—it’s all about nourishing the body with the best nature has to offer.

In early 2020, we started baking in our home kitchen, delivering small-batch sourdough bread to our local community—and we haven’t stopped since. We’re proud to say our bread is still made with the same love and dedication that we started with.

Right now, you can find us exclusively at farmers markets across San Diego, where we connect directly with our customers and share our love of artisanal bread.

What’s Next?
Exciting changes are on the horizon! As of September 1st, 2024, we’re expanding into a commercial kitchen (no retail) in Escondido, CA. Once we have all the necessary permits, you’ll start seeing our bread in local gourmet shops and coffee houses, and we’ll also offer delivery options. Keep an eye out for small retail locations opening in early to mid 2025.
