At The Bread Underground, we don’t bake for the masses.
We craft for the few who understand that some things are worth waiting for.
Our sourdough is naturally leavened, long-fermented, and made in impossibly small batches. Each loaf is born from a slow, intentional process using only organic ingredients and pure spring water—because shortcuts don’t belong in bread made for kings.
There are no preservatives. No compromises.
Just uncompromising bread—scarce, coveted, and fleeting.
You won’t find us everywhere. You won’t find us just anywhere.
This bread is limited. And it’s meant to be.
We’re grateful to our San Diego community for recognizing what this is.
