Our Heritage White Sonora Sourdough celebrates one of North America's oldest cultivated wheat varieties—a grain that has been grown in the Southwest for more than 300 years and is prized for its naturally sweet flavor, creamy color, and exceptional baking qualities.

The organic White Sonora wheat is grown in Southern California and freshly stone-milled by our friends at Staff of Life, a small local mill dedicated to bringing regionally grown grains back to California tables. Their commitment to preserving the character of heritage wheat allows the flour to retain the rich flavor and nutrition that disappear in large-scale industrial milling.

To showcase the grain in its fullest expression, we fold sprouted White Sonora wheat berries throughout the dough. Sprouting gently awakens the grain, adding a subtle sweetness, tender texture, and bursts of whole-grain flavor in every slice.

Naturally fermented with sourdough for more than 18 hours, this loaf is an expression of what happens when local farmers, local millers, and local bakers work together to rebuild a regional grain economy.

Ingredients: Organic White Sonora wheat flour, freshly stone-milled by Staff of Life; sprouted organic White Sonora wheat berries; organic bread flour; spring water; and Utah mined salt.
