This flour represents something far larger than a single harvest.

Grown on the historic grounds of the Antique Gas & Steam Engine Museum in Vista, California, this is our very first museum-grown crop of White Sonora Wheat—one of North America's oldest surviving wheat varieties. 

Despite heavy clay soils, wild mustard, rye, and dense patches of nettle, the wheat thrived, growing more than six feet tall in places and proving why this remarkable heritage grain sustained generations before modern agriculture.

After harvest, the wheat is freshly stone-milled by our friends at Staff of Life, a small local mill committed to rebuilding Southern California's grain economy by milling organically grown California wheat in small batches. Their careful milling preserves the grain's natural flavor, oils, and nutrition while supporting the growing partnership between local farmers, millers, and bakers.

Unlike most specialty flours, 100% of the profits from every bag are donated back to the Antique Gas & Steam Engine Museum and the Whole Wheat Guild to support education, seed preservation, heritage grain research, and the rebuilding of a local wheat ecosystem throughout San Diego County.
